Are you sure you’re actually properly in Manual Mode? Do you have ISO set to Auto? What lens are you using? -

You can try adjusting the brightness of your camera's viewfinder: Menu-->Setup-->Viewfinder Bright But then again once your iris has acclimatized to the ambient conditions maybe it will be too bright for comfort?
