I see many reference saying that to expose S-Log2 you need the S-Log2 LUT applied to the viewfinder, but I see no way to do this IN THE CAMERA. I'm I know I can with an external monitor but I'm just a guy and his camera hiking in the desert carrying limited equipment.

 

Can I do this or is the histogram the only way to gauge exposure when ETTR?

No way to see the effect in camera. The recommendation is to overexpose by 1 to 2 stops to get enough dynamic range to work with in post. Specific LUT profiles can be installed on a monitor itself (SmallHD 501) so you can see how the graded image will appear after edit (or people with no imagination for looking at an extremely flat image) but I've found I may have one look in mind while shooting but choose a different LUT entirely during edit. I like using an external monitor to achieve more accurate focus but you're not going to load up on luxuries when your transportation and capacity is but two legs in the desert and a knapsack.

There is a gamma display assist in the a7rII and A7sII, but I don't know if there is one in the a7II, you will have to check your manual.

Otherwise you will have to use an external recorder like the Atomos to be able to apply a LUT to your footage while filming.
