If I press record when holding the camera vertically the video will be saved in 9:16 instead of 16:9 and I can't fint any option to disable that feature?

It is really annoying having thumbnails being flipped 90 degrees in the editing software as well as having to flip the clips on the timeline. It is also very annoying that it is flipped when previewing the clip both in editing software but also in any media player.

It happens really often when doing run and gun video (documentary style).

I don't understand what 'run and gun' video (documentary style) is, as I don't shoot video but the solution to your problem seem very simple to me.  Make sure you are holding the camera in landscape position before pressing the record button.  What happens if you press the record button when the camera is in landscape position then hold the camera in portrait position then back again to landscape?  Does the recorded video flip-flop from16:9 to 9;16 then back to 16:9?

Sometimes I have to film in rough terrain where I need to keep my balance while walking on rocks, muddy/slippery slopes and so on while following/filming someone. And sometimes I have to press record while doing so, because something is happening that I need to capture. (The audio is very important too.)

So keeping the camera horizontal every time I press record is not always an option. The aspect ratio stays the same throughout the video. My guess is it's embeded in the metadata (like rotated images).

So I need to find a way to disable that behavior.

However, some users have reported limitations in frame rates with this card.  Don't know if that applies, but it sounds similar. Any chance on using/getting a different card? The A7 IV has a ridiculous buffer, it shouldn't slow down at all with a good card. 
    • Make sure camera and lens is updated to latest firmware. 
    • ISO 320 is the A7R5's second base ISO setting. You will find at ISO 320 you will get better results than even ISO 200. I normally take a set of shots at 1600, 3200 and 6400 ISO. I am taking 60 light frames and 10 dark frames. I don't do any adjustments to the files before stacking. I really need to get organised and do some bias frames now. Here is pretty much my first successful Milky Way shot from a few months ago. I was combatting a bit of ambient light and quite a lot of cloud but I'm pretty happy with this. It was shot using my Sigma 16-28 f2.8 which is better at astro than I had anticipated, at ISO 1600.
