My a6500 shoots really great 1080 video when using XAVS S HD at 100M, but when I shoot at 120fps, the videos look soft or like crap.  How do I correct this?

Increase the shutter speed When shooting at high frame rates, a faster shutter speed is necessary to capture each frame effectively. Try increasing your shutter speed to 1/250th or 1/500th of a second to see if this improves the sharpness of your videos.

Use a faster lens A lens with a wider aperture (lower f-stop number) will allow more light into the camera, which can help improve the image quality when shooting at high frame rates.

Adjust your ISO Increasing your ISO can also help improve the quality of your videos when shooting at high frame rates. However, be careful not to increase it too much, as this can introduce unwanted noise or grain in your footage.
