Are you sure you’re actually properly in Manual Mode? Do you have ISO set to Auto? What lens are you using?

You can try adjusting the brightness of your camera's viewfinder: Menu-->Setup-->Viewfinder Bright  But then again once your iris has acclimatized to the ambient conditions maybe it will be too bright for comfort?
