I often shoot long interviews, many hours long. In the Sony A7S manual it says the 29 minute continuous movie record limit is due to overheating issues. Can I not just hit stop/start and go again like I do on a 5Dk3? (The only limitations on the 5D3 are battery and card.) Do any of you have experience shooting for long periods of time with the A7S?

Yes, you can do that. That is what I do. Just hit stop a minute or so ahead of time and then hit record again. 
If you want to avoid that, then you can record into a computer using HDMI (and get UHD also) or buy an Atomos Ninja Star for $300 -but realize that the cards for it are hideously expensive and by the time you have bought two you are at the same or similar price to a used next model up which allows you to shoot onto SSDs directly.
