Video Exposure Different Than Still Exposure

Hey all,

Long time Canon user that just switched to a A7iii.  I'm super excited but having trouble figuring out some settings.  When I record video (still or video more) as soon as I hit the button the exposure seems to jump and blow out all my highlights.  The exposure is fine per light meter and the still photos at the same settings look great but there seems to be something internal happening to shift the video exposure.  In settings I've set movie exposure to full manual and have the picture mode options at their standard defaults.  I really just want this to look like how things did on my 5DmarkIII and EOS-M.  

Any thoughts?
