A7S3 Understanding Zebras

I just got the A7S3 a week ago and am still figuring things out. My biggest confusion is with the Zebra's. For example, when shooting S-Cinetone and have zebras set to 100+, even the areas that say they are clipped still have detail when I pull down the highlights. I would assume that 100+ means you've lost that detail to clipping but it looks like that detail is still captured. Is that because I'm shooting in 10-bit or are my zebras faulty. 

Similarly, when shooting stills I expose for the highlights and even if I deliberately clip in camera it's not clipped when I bring it into photoshop. I am shooting in RAW with the ST profile.

Can someone please explain what I'm missing here.
