Shutter priority video shooting

I have a question regarding video on my a7s. When in shutter priority, the camera not shooting,  the aperture changes depending on the light. When starting the shooting the aperture is locked at the latest number. How can I solve this? When in aperture priority the shutter changes depending on the light, also when shooting.

Shoot video in manual mode.

Set the shutter speed to "match" your chosen fps - you might, for example, use 1/100 to 1/50 for 50 fps. Depends on the motion blur effect you want.

Use aperture in combination with ISO (remember that A7s slog2 (PP7) requires minimum 3200) and - crucially - ND filters. The combination you use will depend on what look you want. Have a look at Philip Bloom's site for a vast quantity of useful information!
